Description

Begin your culinary workshop with a warm Maasai welcome at a homestead or community cultural center in either Kajiado or Narok county. Upon arrival, be greeted by Maasai women dressed in traditional attire, who introduce the day’s menu: slow-cooked Maasai beef stew paired with thick sorghum porridge—one of the oldest and most cherished dishes in Maasai culture. Receive a brief overview of the ingredients used. Sorghum, a drought-resistant grain, has been a nutritional staple for centuries, while beef remains central to the Maasai diet and cultural identity. Wild herbs, such as olkiloriti or osokonoi (depending on season), are incorporated for flavor and medicinal benefits. Begin the workshop with the preparation of cooking materials. Help grind sorghum using traditional stones, pound spices or herbs, and assist in cleaning and seasoning beef the Maasai way. Your hosts explain each step, sharing stories about how food preparation is intertwined with ceremonies, family bonding, and age-group traditions.
